When Andrea Stanley of @valleymalt notified us that they were releasing an undermodified pilsner malt - Jalowetz Pilsner - using a 1920 Czech barley malt recipe with NYS barley from @mosher.farms in Bouckville, NY we jumped at the opportunity to brew up a Czech-Style Pale Lager.

Utilizing a triple decoction mash regimen (boiling a portion of the mash 3x throughout the brewing process), we were able to break down the complex protein and sugars, whilst building a ton of malt complexity and emphasizing drinkability. We generously added NY grown Willamette hops (courtesy of @hopguild) for a nice spicy, herbal and floral character to counteract the sweetness.

Fermented with an old school American Lager Yeast courtesy of @omegayeast, the 4th beer in our Crisp series is naturally carbonated and lagered until we felt it was ready. This beer brings us so much joy and reminds us of how important it is to celebrate local terroir and the time and place of it all. Available now on draft!
